Day 12!

      I can't believe it's day 12 already, almost halfway through!  Actually, more like a quarter of the way through if I extend to 60 days.  I am feeling much better than I was on day 10.  I think it gets easier each day.  Last night we had the chicken smorgasbord from Well Fed Weeknights.  It's basically chicken with a bunch of nibbles on the side and a yummy dipping sauce.  The recipe in the book has specific sides (like beets, I hate beets), but it's really easy to just use whatever you have.



                              Chicken, fruits, veggies, and some pecans and dried apricots.

My daughter loves the smorgasbord because she gets to pick what she wants to eat and it's fun eating a bunch of finger foods for dinner.  I love it because it's so easy!  Really the only thing that needs to be cooked is the chicken and it's just poached.  Also, the dipping sauce is super yummy.  I highly recommend Well Fed Weeknights (and the other Well Fed books), I have enjoyed everything I have made from it.

Tonight I have some ranch steaks I need to cook.  I have not tried ranch steak before, so I am excited to try something new.
